Diversifying a 380-Year-Old Farm With an On-Farm Brewery

About David Walsh-Kemmis

David Walsh-Kemmis is the founder and managing director of Ballykilcavan Brewing Company, which is based at his 380 year old family farm in Co. Laois, in the midlands of Ireland. After taking over from his father in 2004, David was a full time tillage farmer for 12 years before realising that the farm needed to be diversified to keep it viable for future generations. He and his wife Lisa have converted a 230 year old stone grain store into a small micro-brewery and are brewing a range of craft beers using their own barley and water as well as some hops sourced from the farm. David is an IBD certified brewer and maltster and the company’s beers won 6 medals in the 2019 Dublin Craft Beer Cup.

Ballykilcavan Farm, in the midlands of Ireland, has been the home of the Walsh family for 13 generations since 1639. Join current owner David Walsh-Kemmis to find out how he is trying to keep it alive for future generations by diversifying into craft brewing. David has opened an on-farm brewery that sources its barley, water and some hops from the farm and he will show you how he did it.
